How to Use a Clever Dripper: Brew Guide and Recipe

The Clever Dripper is a steep-and-release brewer: coffee steeps in water like a French press, then you set the dripper on a mug and a valve opens, drawing the brew through a paper filter like a pour over. You get immersion body with pour-over clarity — the best of both worlds.
Start with 20 g of medium-ground coffee and 300 g of water at 200 °F (93 °C). Steep for 2:30, then release onto your mug. Total time including drawdown: about 3:30–4:00. That’s a 1:15 ratio for a full-flavored cup.

What you need

Clever Dripper (the large size brews up to 500 ml; the small brews about 240 ml).
#4 cone paper filter (Melitta-style). The Clever uses standard filters, which are cheap and widely available.
20 g coffee, ground medium (table salt texture — the same grind you’d use for a flat-bottom drip machine).
300 g water at 200 °F (93 °C).

Step-by-step recipe

1. Prep. Place a #4 paper filter in the Clever Dripper. Rinse it with hot water over a mug (the valve opens when it sits on the cup). Discard the rinse water and set the Clever on the counter (valve closed).
2. Add coffee. Pour 20 g of ground coffee into the filter.
3. Pour water. Start your timer and pour all 300 g of water in one steady pour, making sure all grounds are wet. This takes about 10 seconds.
4. Stir and steep. Give the slurry 3–4 gentle stirs. Place the lid on top (it helps retain heat). Steep until 2:30 on your timer.
5. Release. Set the Clever Dripper on your mug. The valve opens and coffee drains through the filter. Drawdown takes about 60–90 seconds.
6. Serve. Remove the Clever, discard the filter and grounds, and enjoy roughly 260 ml of clean, full-bodied coffee.

Dialing in

Too sour or weak? Steep 30 seconds longer (up to 3:00–3:30) or grind one notch finer.
Too bitter or heavy? Steep 30 seconds less (down to 2:00) or grind one notch coarser.
Want it stronger? Increase the dose to 22 g for 300 g water (1:14 ratio).
Want a lighter cup? Drop the dose to 18 g for 300 g water (1:17 ratio).
The Clever Dripper is extremely forgiving because the steep time (not pour technique) controls extraction. It’s one of the best brewers for beginners and for anyone who wants good coffee with minimal effort.

Clever Dripper vs French press vs pour over

vs pour over (V60, Chemex): Pour over depends on pour speed and pattern. The Clever depends only on steep time, making it more consistent for beginners. The trade-off is slightly less clarity than a Chemex and slightly less control than a V60.
