Grind size is the single biggest lever after ratio — how to match it to your method and gear.

Grind size controls how fast water extracts flavor from coffee. Too coarse and the cup is sour and weak; too fine and it turns bitter and harsh. Each brew method has a target range — coarse for French press and cold brew, medium for pour over and drip, fine for espresso.
