The short answer

Grind size controls extraction speed. Coarser grinds extract slowly (suited to long, immersion brews like French press and cold brew). Finer grinds extract fast (suited to short, pressurized brews like espresso). Match grind to method and you solve half of all brewing problems.
Use this as your starting point: extra coarse for cold brew, coarse for French press, medium-coarse for Chemex, medium for drip, medium-fine for V60 and AeroPress, fine for moka pot, and extra fine for espresso.

Grind size chart by method

Extra coarse (raw sugar / peppercorn): Cold brew — steeps 12–24 hours. The long contact time makes up for the large particle size.
Coarse (sea salt): French press — steeps 4 minutes. Coarse keeps sediment low and the cup clean.
Medium-coarse (rough sand): Chemex, Clever Dripper — Chemex’s thick filter slows flow, so a slightly coarser grind prevents over-extraction.
Medium (table salt): Flat-bottom drip machines, Kalita Wave — the default for automatic brewers.
Medium-fine (fine sand): Hario V60, AeroPress, cone drippers — the V60’s open cone drains fast, so a finer grind slows the water enough for full extraction.
Fine (powdered sugar): Moka pot — short contact time and low pressure need a fine grind, but not espresso-fine (which blocks the basket).

How to tell if your grind is wrong

Sour, thin, fast-draining? Your grind is too coarse. Go one notch finer.
Bitter, harsh, slow-draining (or clogged)? Your grind is too fine. Go one notch coarser.
Balanced, sweet, drains on schedule? You’re dialed in. Write down the setting.
The key word is "one notch." Small adjustments are how you converge on the right grind. Jumping two or three settings at once overshoots the target.

Why consistency matters more than exact size

A grinder that produces particles of uniform size extracts evenly. A grinder that scatters boulders and dust in the same batch extracts both sour and bitter flavors at once — a muddy cup with no clear character.
This is the core argument for a burr grinder over a blade grinder. Burr grinders crush beans between two abrasive surfaces at a fixed gap, producing consistent particles. Blade grinders chop randomly, creating a wide range of sizes no matter how long you pulse.
If you’re on a budget, a hand burr grinder ($30–50) outperforms any blade grinder and is the single best upgrade most home brewers can make.

Adjusting grind for altitude and humidity

At higher altitudes, water boils below 212 °F (e.g., ≈202 °F in Denver at 5,280 ft). Lower water temperature slows extraction, so grind slightly finer to compensate.
In humid climates, coffee absorbs moisture and swells, effectively behaving as if it’s ground finer. If your usual setting starts brewing slow and bitter in summer, try one click coarser.

Can I use pre-ground coffee for pour over?

Most pre-ground coffee is medium grind, designed for drip machines. It works acceptably in a Chemex but brews too fast in a V60, producing a sour cup. Grinding fresh to medium-fine is a significant upgrade for cone pour overs.

Does grind size affect caffeine?

Indirectly. Finer grinds extract more caffeine per gram of coffee because water contacts more surface area.
