How to Brew Chemex Coffee: A Step-by-Step Recipe
The Chemex brews the cleanest cup in the pour-over family. Use 30 g of medium-coarse coffee, 500 g of water at 200 °F, and a 4-minute total brew for a bright, tea-like cup.

Frequently asked questions
What ratio is best for Chemex?
Start at 1:17 (30 g coffee to 500 g water). For a stronger cup, try 1:15 (30 g to 450 g). For a lighter cup, try 1:18 (30 g to 540 g). Use the [Brew Ratio Calculator](/tools/brewing/brew-ratio-calculator) to scale to any serving size.
Can I use regular filters in a Chemex?
You can, but the result will taste different. Chemex bonded filters are 20–30% thicker than standard pour-over filters, which removes more oils and produces the signature clean, bright cup. A thinner filter gives a heavier, oilier brew.
How is Chemex different from V60?
The Chemex uses a thicker filter (cleaner cup, less body) and has no ribs (slower drainage). The V60 has spiral ribs and a large hole (faster flow, more body). The Chemex is more forgiving; the V60 rewards more precise pour technique.
Can I make iced coffee with a Chemex?
Yes. Use the Japanese flash-brew method: replace half the water weight with ice in the Chemex. Brew 30 g coffee with 250 g hot water over 250 g ice. The coffee brews hot (full extraction) and chills instantly on contact, locking in bright aromatics.
